照烧

照烧(日语:照り焼きてりやき Teriyaki)是日本料理烹饪方法。于食材上涂抹以酱油为基底,混合味醂蒜头清酒等做出的酱料后调理。沾酱中的糖分使料理会反射光芒,故称作照烧。

料理

照烧常用的食材十分广泛,除传统上的鸡肉以及肉质紧密的鱼肉(鳗鱼金枪鱼竹荚鱼),牛肉猪肉等皆可作成照烧料理。另近年市面上也有贩售已调制好、专门用来照烧的酱汁,一般称为“照烧酱”(照り焼きのタレ)[1]

日本以外的发展

据说现在常见的甜味照烧是美国西雅图的韩裔美国人与华裔美国人的发明[2][3]。相比日本的照烧,美式照烧的酱料更,且往往特指一道特定菜肴(烤鸡肉或烤牛肉搭配浇盖照烧酱汁的米饭[4]
