黑胡椒酱(英语:Peppercorn sauce,Black pepper sauce),又称黑椒酱黑椒汁,是一种由黑胡椒调配而成的调味料,咸中带辣,是西餐法国菜的肉类餐点常用到的酱料[1],也是港式西餐的主要酱料,虽以黑胡椒为基本材料[2],但各地制作黑胡椒酱的配方却各有不同。

成分

法式黑胡椒酱以奶油为基底,加入小量磨碎的黑胡椒火葱香草而成,也可能会加入小量的干邑白兰地,制作出来的酱料呈淡褐色,属于法国菜中的白酱[1]。港式黑胡椒酱没有奶油,取而代之是用水、面粉豉油蚝油调配,黑胡椒的分量也较多[3],故此颜色呈深褐色,味道也较辣[4]
