花生炖煮沃洛夫语mafé, maffé, maffe曼丁哥语tigadèguèna, domodah)是西非的一种料理,依水量不同可为浓汤酱汁,用花生酱、番茄与鸡肉、牛肉或羊肉(亦可能不含肉类)煮成[1],源于马利班巴拉人曼丁卡人[2],现常见于西非各地,使用的食材依地区不同而有所差异,除了上述原料外,还可能加入胡萝卜秋葵玉米肉桂辣椒红菜椒粉黑胡椒姜黄孜然等食材与香料。在塞内加尔毛里塔尼亚冈比亚常搭配白饭,在马利常搭配小米,在接近萨赫勒的地常搭配古斯米、在科特迪瓦等热带地区则搭配富富番薯食用。在加纳,花生炖煮常加入水煮蛋一起料理[3]。花生炖煮也由西非的奴隶传播到北美洲,美国南方的维吉尼亚花生汤(Virginia peanut soup)即是由花生炖煮衍生而来的料理[4]
