毛虾属Acetes)是十足目樱虾科的一个,是东南亚的重要经济作物,主要用于生产虾酱或干晒成为虾皮。当中以日本毛虾中国毛虾为当中最大宗。

简述

毛虾属的体型只有1-4 cm 长,身体透明,但有一双黑眼睛,还有身体上含有红色色素的尾足[1]。这些色素来自一种寄生在虾身的红藻,含有虾红素。由于其细小的体型,一般的渔民均会采用拖网来捞捕毛虾。毛虾属的特点除了其细小体型以外,其第四及第五对脚亦已退化[1][2]

生命周期

毛虾属的绿色,生长后其体积会发涨至原来的两倍以上[3]。每年的年初,卵子会孵化成为幼虫,并于同年成长、成熟成为成虾[4]

  • 日本毛虾 Acetes japonicus Kishinouye, 1905:又名秋酱虾(akiami paste shrimp)

相关制品

虾皮

虾皮是毛虾的干制品。虾皮体小皮薄,干制后很薄像一层皮,因此得名。虾皮按加工方式分为生虾皮和熟虾皮。虾皮常用于或凉拌等各种菜肴。虾皮含有丰富的矿物质微量元素虾青素,具有不小的营养价值。

虾酱

虾酱是虾膏的延伸产品,虾酱的主要原料是虾膏。
