蔗虾

蔗虾越南语Chạo tôm鮉𩵽),是越南餐馆里常见的菜色,跟越南春卷、越南牛肉粉扎肉等一样有名[1]。制作方法非常简单,先将虾仁去壳清洗干净,用背将它压成泥后再剁至虾蓉状,下调味料搅拌然后重复摔打成虾胶。将切成大约10公分长的小段,将虾胶包裹着䉀,头尾两端留下2公分不用包裹,在滚油中把䉀虾炸数分钟至表面金黄色即可[2]
