爱兰又称杜格酸奶阿尔巴尼亚语Dhallë波斯语دوغ‎, dugh阿塞拜疆语ayran阿拉伯语شنينةšinīna 或 عيران ayran土耳其语ayran亚美尼亚语tan普什图语شلومبې‎;库德语:ماستاو)是一种乳白色的冷饮,它由三分之一的酸奶和三分之二的盐水搅拌而成[1][2]。爱兰在中东中亚伊朗[3]土耳其[4]库尔德斯坦亚美尼亚阿塞拜疆哈萨克塔吉克斯坦吉尔吉斯[2]阿富汗[5]黎巴嫩叙利亚[6])以及东南欧地区(巴尔干半岛塞浦路斯)和俄罗斯[7]非常流行。[8]爱兰由突厥人在1000多年前发明,11世纪的突厥语大词典就有这种饮料的记载。土耳其总统雷杰普·塔伊普·埃尔多安曾提倡将其作为酒的主要替代品。

一杯爱兰饮料

历史

据希林·西蒙斯所著,杜格酸奶长久以来都是古波斯(现今的伊朗一带)的普及饮品。[9] 以及在一本1886年出版的著作中,有描述到以凝乳混合冷水,加以薄荷调味的杜格酸奶。[10] 它的名称源自波斯语挤奶”(dooshidan)一词。[11]

根据芮温·哈利奇,杜格酸奶是传统的突厥饮料,在公元1000年之前就被游牧的土耳其人饮用[4] 而据贝拉莱廷·科克和叶克亚·凯末尔·阿夫萨尔(穆斯塔法凯末尔大学食品工程系教授),在千年之前,古突厥首先制作出杜格酸奶,当时的人会用水稀释有苦味的酸奶,来改善它的味道。[12]

大约在元1000年的土耳其字典突厥语大词典把杜格酸奶定义为“以奶制成的饮料”。[13]

准备

杜格酸奶是冷食,尤其是夏季,[14]经常用来做烤肉或米类的配菜。[15]杜格酸奶是由酸奶和冰水混合制成,[16]有时候会碳酸化和以薄荷调味。[11][17][18] 杜格酸奶又被称为稀释的酸奶[4] 和酸奶与冰水混合制成的最清爽的饮料。[19]
