汉堡排

汉堡排(英语:hamburg steak),或称汉堡,是一种由牛绞肉或其他夹有牛绞肉做成的肉饼[1]

历史

鞑靼牛肉俄国传入德国后,德国人将鞑靼牛肉煎熟而成,为工人流行的食物,而汉堡为德国工业重镇,故以此地为名。

另一说法是,大航海时代时,因为储存在船舱内的肉块干硬不好食用,为了能吃到柔嫩的肉块而演生出来的烹调方法,而汉堡港等船只停泊处最为繁盛,故以此地为名。

索尔兹伯里牛肉饼是汉堡排的一种变体。

据说美国在世界大战时,因为牛肉制品牛排为奢侈品,故有交换汉堡的运动产生。之后将汉堡排夹在面包中极为畅销,催生了广为人知的麦当劳快餐企业。

1960年代以后日本处于高度经济成长,营养丰富等食材处于高价位,故衍生出使用较廉价的绞肉(鸡肉、猪肉)烹调而端上餐桌,成为家家必备的美食佳肴,从此以后家庭主妇更将汉堡列入晚餐菜单。由于烹调手续简单,转眼之间风靡全日本。由于1980年代以后急速且多样化的食品如蒸煮袋(调理包)食品(真空汉堡)登场,变成了十分常见的料理及食材。蒸煮袋汉堡烹调简单,一气呵成(酱料包含其中),只要用沸水烫过一次后即可上桌。
