牛绞肉，又称为免治牛肉，是一种已经绞成肉碎的牛肉。

供应

通常是用比较不软嫩、不受欢迎的便宜牛肉制成的。因为在市场上供应的免治牛肉是一种肉碎，消费者难以分辨肉类的来源以及肉类的成分，由于牛肉的售价比猪肉昂贵，于是有商家在免治牛肉混入猪肉等其他肉类，此种行为被质疑是欺骗消费者[1]。
