胡三极（17世纪—1646年），字赞皇，浙江杭州府昌化县人[1]，明朝政治人物。
胡三极个性聪颖而且忠孝，熟读经史和春秋大义，抗论古今时口若悬河，写作则兼具班固与马融之长，下笔可至千言；崇祯十二年（1639年）他成为选贡，次年（1640年）成特用出身，获授崞县知县，调任乐安县，在两地都有善政。隆武二年（1646年）清朝军队攻陷乐安，被擒后三次劝降也不理睬，说：“我今天可以在地下见到先帝就已足够！”因此碎首而死，幕府诸生方尚宾同时殉死，乐安感叹二人忠义而立祠祭祀[1][2]。
