栽培品种上海白菜

青菜(新加坡作上海白菜,香港作小棠菜,台湾作青江菜),是中國江浙一带最常见的蔬菜品種,由小白菜改良而來。特點是菜葉子和菜邦子均小巧飽滿,甘甜微苦,口感厚實又清脆,屬於耐熱又耐寒的農作物,極好養活。多分佈於上海杭州蘇州無錫鎮江等城市中。

別稱

這種蔬菜別稱較多,又可稱小青菜胖白菜矮白菜上海青苏州青青薑菜小棠菜青梗白菜湯匙菜油菜等。

  • 中國江浙一帶可直接称为“青菜”。在當地,青菜並非是指全體綠色蔬菜,而是專指本條目的青梗菜。做法有清炒、加辣椒油爆炒、白灼、麻辣燙中的汆燙或者直接投入火鍋中煮。
  • 中國北方漢族地區则称之为“油菜”,基本用在火鍋裏。

食用方式

莖葉均使用,求新鮮。嫩莖食用常浸入香料中。在各系菜餚中多維持原鮮艷嫩綠色彩。相對其他以炒食爲主的青菜,上海青以蒸、煮方式烹調頗爲常見,尤其以火鍋和白灼兩種形式受到歡迎,還可以加蠔油豆瓣醬生抽是常見的輔料,亦常單獨作爲主料。
