腌制三文鱼瑞典语Gravlaxgravad lax丹麦语gravad laks挪威语gravlaks芬兰语graavilohi)是一道菜名,在北欧地区非常盛行。用莳萝腌制三文鱼,作为前菜、搭配面包作为点心或搭配马铃薯主食都是常见选择。

历史

腌制三文鱼这一菜肴源于早期渔夫将刚捕获的三文鱼放入沙坑并用食盐腌制,从而使得三文鱼稍有发酵并得以保存。Gravlax这一名称在瑞典语中是“grav”(意为坟墓)和“lax”(意为三文鱼)的拼合词,指代这种埋在沙坑中的三文鱼。[1]

现今的腌制三文鱼不再依靠发酵,而是将三文鱼放置在食盐、糖和莳萝混合的腌料中腌制数日,但仍然保留gravlax这一名称。
