熏鲑鱼面包

熏鲑鱼,亦称烟三文鱼,为西餐常见的一种餐点,烹调方式为将生鲑鱼肉用以生火烟薰至半熟[1][2]。常见之配料有橄榄洋葱柠檬等。

烹调方式

前置作业,木屑需先浸泡于水中,再彻底沥干。

熏制机

近代大量生产烟熏鲑鱼,是将含鱼皮的大片鲑鱼片,以熏制机设定约16°C与15小时,熏烟使用枫木屑加热产生,熏烟会先经过冷却,避免鱼肉被烤熟。熏制完成后,再冷藏到3°C使肉质紧致,再去除鱼皮与修整及切片包装。

烤箱

将木屑置于烤盘上,再放上涂油的烤架,再放上生鲑鱼片,再用铝箔完整包住。以烤箱烘烤。
