米糠油,又称米油稻米油玄米油,是食油的一种,以糙米加工成白米时脱去的米糠炼制。

米糠油色泽淡黄,沸点达254°C,适合之用。米糠油有八成不饱和脂肪酸单元不饱和脂肪酸占47%,多元不饱和脂肪酸占33%),加上有丰富维生素E及其他抗氧化物,因此被认为是健康的食用油。米糠油属于不饱和度高的食用油,一般适合用来炒菜,油烟少也较不油腻。高品质的米糠油还可直接饮用,且可用来做凉拌菜。

米糠油主要在东亚,例如日本中国使用。但由于其精炼过程复杂且成本高昂,因此一直未有普及。
