Sebelum abad ke 20, iga babi merupakan makanan yang paling umum dikonsumsi pada hari raya di Amerika Utara. Kalkun ketika itu belum dipelihara di peternakan unggas melainkan masih berkeliaran di alam liar sehingga untuk mendapatkannya harus dengan berburu. Thanksgiving dirayakan di luar musim penyembelihan babi, sehingga daging kalkun digunakan untuk pengganti daging babi.[3] Tradisi mengkonsumsi daging kalkun pada hari raya menyebar di kalangan atas penduduk Inggris pada abad ke 17,[1] sedangkan kaum buruh mengkonsumsi daging angsa yang dipanggang.[4]

Telur kalkun umumnya tidak dijual karena masyarakat lebih membutuhkan dagingnya, selain karena kalkun tidak bertelur sebanyak ayam, bebek, dan puyuh. Sehingga harga sebutir telur kalkun dapat melebihi harga satu lusin telur ayam.[5][6]
