鱼腐

鱼腐是一种使用鲮鱼肉制作、外表像油豆腐顺德食品,因其嫩滑像豆腐得名。鱼腐原创地为罗定(一说是顺德乐从)。鲮鱼肉加入食盐蒜茸胡椒粉打至起胶(上劲)后加入生粉拌匀,加入蛋黄拌匀后加入已打成泡沫的蛋白拌匀,做成乒乓球的形状放进热油以小火炸至微黄色即成鱼腐,料理时可以放汤或配搭其他食材。

冬菇烩鱼腐

冬菇烩鱼腐是传统的顺德菜,鱼腐吸收冬菇蚝油的味道将更可口。将冬菇泡软去蒂后略炒,加入鱼腐、蚝油兜乱后加水略焗,冬菇熟后加麻油即成。
