花椒油

使用花椒油的红油抄手,成都龙抄手餐厅

花椒油又称油辣红油,是一种原产四川的特有辣油,也是和豆瓣酱齐名的四川特色调味酱。其原料是花椒,主要特点是麻而不辣。比起其他辣油,花椒油的色泽特别橘红浑浊,红色的油体在辣酱中起起伏伏。[1]另外在台湾,因为红油抄手的大量普及,所以花椒油间接地成为台湾菜色中的重要一部分。

菜式

花椒油有多种烹调方法,例如炝、爆、炒、煮、焖等。川菜中很多菜色都必定用到花椒油,其中以红油抄手最有名,其他还包括花椒油干拌面、花椒油炒饭、花椒油烧肉、花椒油鸡、花椒油回锅肉等等。另外,川菜中的宫保鸡丁、干烧鱼、回锅肉、家常豆腐、夫妻肺片、合川肉片、干煸牛肉丝、怪味鸡块、鱼香肉丝、水煮牛肉、水煮鱼等,这些菜肴虽然不一定会用到花椒油、但是使用的话会大幅提升菜色的风味。[2]
