เห็ดหอม เป็นสิ่งมีชีวิตจำพวกเห็ดรา ซึ่งเราสามารถรับประทานได้ นิยมนำมาใช้ประกอบอาหารโดยเฉพาะอาหารจีนและอาหารญี่ปุ่น สามารถนำไปตากแห้งเพื่อให้เก็บไว้ได้นาน
อนุกรมวิธานและชื่อ
[แก้]มีการระบุชื่อวิทยาศาสตร์ของเห็ดราชนิดนี้ครั้งแรกในชื่อ Agaricus edodes โดยไมลส์ โจเซฟ เบิร์กลีย์ใน ค.ศ. 1877[1] ซึ่งเดวิด เพกเลอร์จัดอยู่ในสกุล Lentinula ใน ค.ศ. 1976[2] เห็ดรานี้ได้รับชื่อพ้องในประวัติอนุกรมวิธาน ดังนี้:[3]

ชื่อเห็ดในภาษาญี่ปุ่น (ญี่ปุ่น: 椎茸; โรมาจิ: shiitake) มาจากคำว่า ชิอิ (ญี่ปุ่น: 椎; โรมาจิ: shii, Castanopsis) จากต้น Castanopsis cuspidata ที่มีท่อนไม่ซุงตายที่ปลูกโดยทั่วไป กับ ทาเกะ (ญี่ปุ่น: 茸; โรมาจิ: take, เห็ด)[4] ส่วนชื่อพฤกษศาสตร์ edodes เป็นศัพท์ภาษาละตินที่แปลว่า "กินได้"[5]
