芙蓉蛋是一道中國粵菜,以叉燒(或以火腿代替)、蝦仁芽菜韭菜洋蔥等配料混以雞蛋煎製而成。這道菜式傳到歐美地區後,為配合當地口味而被改良,變成類似西式蛋餅的食品。

相傳芙蓉蛋是清代翰林朱善祥在雲南任主考時吃到的地方菜,因菜味鮮、甘香、軟滑,神似綻放的白芙蓉,故名“芙蓉蛋”,其回到家鄉後,他結合了當地的飲食習慣重新調整口味。從此,芙蓉蛋便在浙江省桐鄉市濮院得到流傳 。
