酸菜餸滷肉飯

肉臊飯(又寫做肉燥飯魯肉飯)係臺灣特色餐,大體做法都係飯面鋪用免治豬肉豉油整嘅「肉臊」,有時會配搭埋其他餸菜。

另外,「滷肉飯」有時(主要係臺灣中部到北部)亦等同肉臊飯,有時(主要係臺灣南部)就會用到唔切碎而只嘅切成一塊塊嘅五花腩

滷肉飯喺臺灣被視為極具台灣特色嘅民眾小食,喺全臺各地都有賣,南北有唔同意義。喺北臺灣,滷肉飯係一種淋上含有煮熟碎豬肉或炒香肉燥(豬絞肉)同醬油滷汁嘅白飯,有時啲醬汁亦會有香菇丁等成份,同炕肉飯唔同,睇落似南臺灣肉燥飯;「滷肉飯」喺臺灣南部係指有滷汁塊狀肉嘅切丁滷肉飯,有店家會配搭筍乾蘿蔔乾,同彰化嘅大塊炕肉飯亦不盡相同[1]

南臺灣肉燥飯通常係以肥瘦一定比例嘅豬絞肉滷製,但北臺灣滷肉飯通常用含有豬皮嘅肥肉切丁滷製,兩者口感同口味略有不同。喺香港嘅臺式餐館,「滷肉飯」大多係用滷五花腩塊,而「魯肉飯」或「肉燥飯」就大多用滷肉碎[2]。而中國大陸嘅「台灣滷肉飯」就唔分,使用小塊滷肉或者肉燥都可以稱為「滷肉飯」。
