老抽係豉油一種，多數用嚟煮嘢食唔係用嚟點。色澤較深，棕褐色有光澤，味道較濃郁鮮甜。

用途

老抽一般用來畀食品上色用。普通嘅豉油要放四、五滴，先能夠令菜有豉油嘅味道同色澤，而老抽一般都係放少少就夠。

製法

老抽以大豆同麵粉做主要原料，人工接入種麴，經天然曬制同發酵，再將搾制嘅老抽再曬制兩至三個月，經沉澱過濾就成為老抽。
