鲜味剂

鲜味剂,煮菜等调理食物时,所加入用以增加食物风味的调味品,其来源可能为人工合成或是以其他的食材精制而成。

常见的鲜味剂除了味精、高汤块之外,还有蚝油鸡粉(鸡精)、鱼露虾酱、香菇精、柴鱼、烤肉酱、酱油、各种快速面的调味包等。主要的成分多是一些合成氨基酸,且上列的鲜味剂常有极高量的份。

较受瞩目的时这些鲜味剂常被过度使用,因为主成分为不必需氨基酸,过量摄取后,因为这些氨基酸具很强的吸水性,吃了后会很口渴,且会造成的负担。

若要避免人工鲜味剂,可利用如大骨头、昆布熬汤,就是最好用的天然鲜味剂;也可以用高丽菜香菇洋葱玉米甘蔗头等熬汤。
