柴鱼片

鱼干片(日语:削り節けずりぶし Kezu ri bushi),是一种把鲣鱼干鲭鱼干、沙丁鱼干、鲔鱼干等,刨成一片一片的调味品

作法

将捕获的鲣鱼去除头部、内脏与放血,将鱼切成适当大小的鱼块,再放到大锅中以未滚开的热水煮一至二小时防止鱼肉腐败,再来将煮好的鱼块的鱼皮、皮下脂肪与鱼刺去除,再来将处理好的鱼块用橡木或栎木等发烟量较大的木材来进行烘焙,重复数次的烘焙与放冷步骤,使其鱼块内部水分逐渐去除,此次的鱼块被称为荒节,表面上附着一层焦油。再来将荒节日晒一天、阴放数天后削除表面焦油与修整荒节外型,削除表面焦油的鱼块被称为裸节。最后再将裸节日晒数天,再阴放数天使其长霉后擦除再日晒,重复数次步骤,使裸节内部更加干燥,这个步骤可以让霉来分解裸节的脂肪,提升裸节的香味,制作好的裸节最终被称为“本枯节”。

鲣鱼干片,又称柴鱼片木鱼花木鱼碎[1],是将鲣鱼干刨成薄片而成,为鱼干片最常见的种类之一。

用途

基本上当作一种调味品使用[2]

  • 柴鱼片常做为日式高汤的底料,也时常加入味噌汤的汤底,增加味噌汤的鲜味及甜味。
  • 柴鱼片可用于皮蛋豆腐及凉拌豆腐作为调味品
  • 在日本可将柴鱼片洒在白饭上面,淋上酱油后食用,称为“猫饭日语猫まんま”。
  • 洒在章鱼烧做为佐料。
  • 市面上的营业餐厅与市售泡面调味包经常利用营业用鲣鱼粉、柴鱼粉做为汤头的原料,是甘甜汤头速成的方案。

可能致癌物

由于柴鱼是由高温烘烤烟熏制成,而可能产生苯芘这种致癌物质于柴鱼焦黑外皮上,故刨片制成柴鱼片食用前,应去除焦黑的外皮。[3]
