泡菜年糕(韩语:떡볶이),又叫韩式炒年糕,是一道很受欢迎的韩国炒年糕小吃,一般能在当地的路边摊或布帐马车处买到[1]。这道菜的雏形是炖朝鲜打糕(떡찜),是用年糕片、肉、蛋和调味料做成的一道炖菜。炒年糕从前是朝鲜宫廷料理中的一道菜[2]。这种炒年糕是由水煮条状年糕、肉、菜及调味汁制成,上桌前会在上面加白果核桃。最初的炒年糕(当时叫宫中炒年糕)是宫廷用作招待宾客的菜,因此是当时高档菜的代表作。原来的炒年糕是一道炒菜,由条状年糕(가래떡)与不同的材料作组合,例如牛肉、绿豆芽、葱、香菇、萝卜及洋葱,最后用酱油来调味[3]

现代演变

朝鲜战争之后,有一种炒年糕开始变得普及起来。原来的炒年糕是一道咸的菜,而新的炒年糕比原来的辣得多,并且很快就比传统的更受欢迎。除了传统的材料外,这种炒年糕还用了苦椒酱(一种用辣椒制成的辣酱),还有鱼糕。加进辣炒年糕的其他材料还包括水煮蛋、煎馒头、香肠、快熟面(这种叫拉面辣炒年糕:라볶이)、各种蔬菜及奶酪。现在也流行各种不同的辣炒年糕,例如海鲜辣炒年糕(해물 떡볶이)及辣炒年糕饭(쌀떡볶이)。用面粉做的炒年糕在早期也流行。
