蚝豉简化字曾写成蚝士)是一种干海产,由牡蛎(广东人称为)生晒而成[1]

种类

蚝豉主要为分生晒、干及半干湿三种。生晒蚝豉即是在阳光下晒干鲜蚝。干蚝豉则使用风干的方式,主要来自日本韩国。半干湿蚝豉是先把蚝煮熟及过冷河,再将其风干而成。外观较大颗、呈现金黄色光泽、内里溏心的天然生晒蚝豉,在香港称为金蚝[2]

食法

广东香港,因为“蚝豉”的粤语和“好市”相似,因此被视为好意头的贺年食物[3]。例如“发财好市大利”,即是由发菜、蚝豉及猪煮成。还有蚝松生菜包
