猎人烩鸡(英语:cacciatore意大利语pollo alla cacciatora)是一道传统意大利饮食,名字来自意大利语的“猎人”,是指按照猎人烹调习惯的菜式[1],使用洋葱香料、有时添加番茄青椒并佐以葡萄酒调味的烹饪方式。[2]

此料理普遍使用鸡肉为主,也有搭配兔肉或使用莎乐美肠[3]佐以大蒜与胡椒的变化方法。

制作

猎人烩鸡的基本作法通常是先在大煎锅中加热几个汤匙的橄榄油,放入撒了盐和胡椒的鸡肉在锅中并每侧煎三到四分钟。盛起鸡肉后,倒掉大多数的油脂。剩余油脂用来翻炒洋葱、胡椒或其他蔬菜几分钟。一小罐的去皮番茄(去除其中液体并粗略切碎后)通常与迷迭香和半杯红葡萄酒一起加入锅内,而月桂叶以及剁碎的红萝卜也可以使用来增加额外的甜味。煎好的鸡肉放回锅内并盖上锅盖,再慢火煨煮约一个小时后就可以完成。此外,猎人烩鸡往往搭配乡村面包或意大利面。

变化

这道主菜随着不同区域中可取得的食材而有许多变化。例如,在意大利南部,猎人烩鸡往往添加红葡萄酒,而意大利北部厨师则常使用白葡萄酒。也有一些作法中会使用蘑菇入菜。[4]

美式猎人烩鸡

美国,这道料理常以意大利式蕃茄酱调理,不过在意大利当地则不一定会含有番茄。[5]
