维也纳炸肉排

炸肉排(德语:Schnitzel或者Wiener Schnitzel),中文发音类似“许尼草”,泛称炸猪排、维也纳炸牛排,流行于中欧的一种菜肴,起源于19世纪的奥地利维也纳。一般是将猪肉牛肉或者火鸡肉的薄片,用工具压软然后裹面包屑煎炸。在德国,更多餐厅会提供猪肉或者火鸡肉的炸肉排。

一般在南部德国和奥地利,餐厅中可选马铃薯沙拉(Kartoffelsalat)、德国酸菜或者薯条和炸肉排组成拼盘一起卖。配以1/4的柠檬挤在上面来解油腻。 小吃店或肉铺中会以快餐的形式贩卖,加面包番茄酱芥末酱是最常见的方式。

做法

1、猪里脊肉洗净,拍松,均匀抹上A料;鸡蛋打入碗中搅匀成蛋汁,倒入盘中备用。

2、猪里脊肉两面均匀沾裹B料。

3、再均匀沾上蛋汁。

4、最后沾裹C料备用。

5、锅中倒入2杯油烧热,放入猪里脊肉用小火炸至呈金黄色,捞出,沥干油分。

6、切成长条,盛入盘中即可。
