滚刀法

滚刀法是切法之一。一手滚动原料,一手持刀跟切,切一刀滚动一次。切时要掌握一定的斜度。多用于切圆而脆的材料,如:萝卜马铃薯及一些瓜类。通过改变切时的斜度和滚动快慢,使切出来的原料形状各异。[1]
