格吕耶尔起士（法语：le gruyère，法语发音：[ɡʁɥijɛʁ] （ⓘ）；德语：Greyerzer）是源自瑞士弗里堡州小镇格吕耶尔（Gruyères）的一种起士。
概述
格吕耶尔起士外壳涂有油，相当大块，起士肉质地坚硬，口感细滑，呈黄色，上面有很多小洞眼，闻起来有蜂蜜和坚果的味道。
制作
在制作过程中，格吕耶尔起士需以盐水保持湿度，加速成熟的过程。
