古井烧鹅

古井烧鹅江门新会大广海湾经济区古井镇的特色粤菜。当地最出名的烧鹅店是平香和恒益,在古井镇,以及新会市区都开设了不少分店。

古井烧鹅通常选用清明前后至天热前,或者十一月至过年时的黑鬃鹅,因为这两段时间的鹅最为肥美。由于清明前后的鹅肥美,不少新会人拜山祭祖时都会购买古井烧鹅作祭品。

烧鹅的腌料由新会陈皮、蒜蓉、油、糖等多种香料混合填入鹅身并封口,风干后放入砖炉,以荔枝柴烧烘,取其淡淡的荔枝果香。烧鹅斩件时流出来的烧鹅汁会淋回烧鹅肉上,因此比普通烧鹅较为湿身。

传说

相传在南宋末年,当时宋皇室南逃至崖门,一名御厨跟随皇室南下。他在宋室殉国后,在崖门银洲湖西岸的仙洞村定居下来。御厨以皇宫烧鹅的手艺,开了一间烧鹅店。后来烧鹅秘方传了给他的女儿,后来女儿嫁到银洲湖东岸的古井,连同秘方也带了过来,并发扬光大。自从之后,古井烧鹅远近驰名。[1]
