Siagi (kutoka Kiarabu صيغ, siyagh) ni shahamu (mafuta) kutoka katika maziwa inayotumiwa kama chakula, hasa kwa kupakwa juu ya mkate au katika upishi.

Mafuta ndani ya maziwa

Maziwa ya ng'ombe, lakini pia ya wanyama wengine, huwa na kiasi cha shahamu ndani yake. Kama maziwa yanakaa baada ya kukamuliwa, shahamu inapanda juu na kuonekana kwenye uso wake. Hapo inaweza kukusanywa.

Siagi ni thabiti kama inatunzwa katika jokofu, lakini nje yake inalainika na kuyeyuka kabisa, kuwa kama mafuta mnamo sentigredi 30-35.[1]

Siagi inaharibika haraka katika tabianchi ya joto pasipo jokofu, hivyo matumizi yake kama chakula cha pekee, tofauti na maziwa, yalianza katika nchi zenye tabianchi baridi.[2] Mataifa ya kale walitumia siagi mara nyingi kama dawa la kupakaa.

Kutengeneza siagi

Siagi inatengenezwa kwa kutisikisha maziwa na kazi hii inarahisishia kutengana kwa shahamu na sehemu nyingine. Krimu inayokusanyika kwenye uso wake bado ni emalshani ya shahamu na maji inayoendelea kukandamizwa kwa shabaha ya kupunguza maji ndani yake. Wakati siagi imekuwa tayari ina asilimia 15-20 za maji ndani yake.

Zamani siagi ilitengenezwa kwa mikono. Tangu karne ya 19 mbinu mbalimbali ziligunduliwa kwa kutengeneza siagi kiwandani. Siagi hii inafika sokoni mara nyingi ikitiliwa tayari kiasi cha chumvi.

Mwaka 2015 tani milioni 2.4 za siagi zilitengenezwa duniani. [3]

Majarini kama chakula mbadala

Tangu karne ya 19 majarini ilibuniwa katika Ulaya kama chakula mbadala kwa sababu wakazi maskini kwenye miji iliyokua haraka walikosa uwezo wa kununua siagi. Majarini hutengenezwa kutoka mafuta ya mimea (k.v. alizeti, karanga, mawese) pamoja na maji na gharama zake ni nafuu kuliko siagi.

Kule Uhindi katika mazingira ya joto watu walibuni njia ya kutunza siagi kwa muda mrefu kwa njia ya kuichemsha hadi maji yote ndani yake yatoke nje. Tokeo lake huitwa ghee (tamka: gii): namna hiyo ya siagi inaweza kutunzwa siku nyingi bila jokofu. Hadi leo ghee ni sehemu muhimu ya upishi wa Kihindi.
