Ganache er en blanding av fløte og sjokolade som anvendes som fyll eller glasur i praliner og kaker.[1] Ganache kan dessuten være smaksatt, for eksempel med kaffe eller likør. Ganache skal være slettere og mindre søt enn fudge.

Normalt sett holder man den oppvarmede fløten over den finhakkede sjokoladen og rører til jevn smete. Forholdet er 1:1–1:2 for fløte og sjokolade, avhengig av hvor tykk en vil at den skal bli. Om en tilsetter honning eller smør så blir ganachen mer glanset, hvilket kan være ønskelig på for eksempel kaker.
